Italian Lemon Garlic Prawn Linguine

Indulge in a taste of the Amalfi Coast with our featured culinary creation, Lemon-Garlic Prawn Linguine with Herb Bread Crumbs. This dish is a savory tribute to the coastal flavors of Southern Italy, where the azure sea meets the rugged cliffs adorned with lemon groves. Experience the coastal charm and culinary finesse of the Amalfi Coast as you savor this flavorful seafood delicacy during our virtual retreat, an invitation to transport your senses to the sun-soaked shores of this picturesque Italian paradise..

Serves 4, prep time 30 minutes.

INGREDIENTS

For the Prawn Linguine:

  • 500g prawns, peeled and deveined
  • 300g linguine pasta
  • 4 cloves garlic, minced
  • 1 lemon (zest and juice)
  • 1/4 cup olive oil
  • 1/4 cup chopped fresh parsley
  • Salt and pepper to taste
  • Fresh chilli (optional)
  • Grated Parmesan cheese for serving

For the Herb Bread Crumbs:

  • 1 cup fresh breadcrumbs
  • 2 tablespoons chopped fresh herbs (can include any of these three: parsley, basil, and oregano)
  • 2 tablespoons olive oil
  • Salt and pepper to taste

METHOD

    1. Press play on your Amalfi Coast retreat radio
    2. Begin heating your water to cook the pasta in on the stove.
    3. In a bowl, combine the prawns with minced garlic, lemon zest, and a pinch of salt. Set aside to marinate for 10-15 minutes while you cook the pasta.
    4. Cook the linguine according to package instructions until al dente. Drain and set aside.
    5. In a pan, heat olive oil over medium heat. Add the marinated prawn and cook for 2-3 minutes on each side until they turn pink and are cooked through. Remove the shrimp from the pan and set aside.
    6. Using the same skillet, add a bit more olive oil if needed. Sauté the cooked linguine in the pan, adding lemon juice, chopped parsley, and chilli (if desired). Toss to combine and season with salt and pepper to taste.
    7. For the herb bread crumbs, heat olive oil in a separate pan over medium heat. Add the breadcrumbs and stir continuously until they turn golden brown. Remove from heat and toss with chopped fresh herbs, salt, and pepper.
    8. To serve, place the lemon-garlic linguine on a platter or individual plates. Top with the cooked shrimp and sprinkle the herb bread crumbs over the dish. Serve with grated Parmesan cheese on the side. Buon appetito!
