Pan Con Tomate, Menorcan Style

Pan con Tomate is a beloved Menorcan favourite that embodies the simplicity and deliciousness of Mediterranean cuisine. This traditional dish, also known as “pa amb tomàquet” in Catalan, celebrates the vibrant flavours of ripe tomatoes, fragrant garlic, and quality olive oil atop crusty bread. Originating from Catalonia but cherished throughout the Balearic Islands, Pan con Tomate has become a staple on Menorcan tables, enjoyed as a snack, appetizer, or accompaniment to main dishes. Its preparation is as straightforward as it is delicious! Whether savoured as part of a leisurely breakfast, shared with friends over tapas, or enjoyed alongside a hearty meal, Pan con Tomate captures the essence of Menorcan hospitality and culinary tradition.

Serves 2 (5 minutes)

INGREDIENTS

  • 2 slices of rustic bread (such as ciabatta or country loaf)
  • 4 ripe vine tomatoes
  • 2 cloves of garlic, peeled and halved
  • Extra virgin olive oil
  • Sea salt, to taste

METHOD

  1. Press play on your Menorca retreat radio
  2. Pop your bread in the toaster or under the grill to toast
  3. Grate your tomatoes into a bowl, then put the gratings through a sieve, keeping the juices. Put the sieved tomato into a new bowl and add 2 tablespoons of the juice back to the tomatoes
  4. By now the toast should be ready. While the bread is still warm, rub each slice with the cut side of a garlic clove on one side , pressing firmly to release the garlic juices into the bread.
  5. Next, spread the grated tomato over the bread
  6. Drizzle each slice of bread with a generous amount of extra virgin olive oil
  7. Season the Pan con Tomate with of sea salt to taste
  8. You can always add basil and balsamic or anything else you enjoy but it’s the Menorcan way to enjoy this – simple, yet delicious!
  9. Serve immediately and enjoy the honest yet vibrant flavours of this Menorcan favourite
